Baking sends a delicious aroma through the kitchen. Two days ago, I made some banana bread at home, based on a recipe from Flour Bakery with some custom modifications.
Ingredients
- 1 2/3 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/2 cup sugar
- 2 eggs
- 1/4 cup melted butter
- 1/4 cup Greek yogurt
- 4 ripe bananas, mashed
- 1 teaspoon vanilla extract
- 2/3 cup walnuts, toasted and chopped (omitted this time, but they’d make a tasty addition)
Directions
- Set oven to 350 degrees F. Line a loaf pan with parchment paper (or buttered up aluminum foil).
- Sift together the flour, baking soda, cinnamon and salt.
- Beat sugar and eggs with a whisk until light and fluffy, about 10 minutes.
- Stir together butter and Greek yogurt; drizzle butter-yogurt mixture into sugar and eggs.
- Add mashed bananas and vanilla.
- Fold in dry ingredients and nuts.
- Pour into a lined loaf pan and bake for about 45 minutes to 1 hour.
When the beautiful baked loaf comes out of the oven, let it cool for a little bit, and then slice off a nice hearty piece 🙂
