Baking sends a delicious aroma through the kitchen. Two days ago, I made some banana bread at home, based on a recipe from Flour Bakery with some custom modifications.

Banana Bread

Ingredients
  • 1 2/3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup sugar
  • 2 eggs
  • 1/4 cup melted butter
  • 1/4 cup Greek yogurt
  • 4 ripe bananas, mashed
  • 1 teaspoon vanilla extract
  • 2/3 cup walnuts, toasted and chopped (omitted this time, but they’d make a tasty addition)
Directions
  1. Set oven to 350 degrees F. Line a loaf pan with parchment paper (or buttered up aluminum foil).
  2. Sift together the flour, baking soda, cinnamon and salt.
  3. Beat sugar and eggs with a whisk until light and fluffy, about 10 minutes.
  4. Stir together butter and Greek yogurt; drizzle butter-yogurt mixture into sugar and eggs.
  5. Add mashed bananas and vanilla.
  6. Fold in dry ingredients and nuts.
  7. Pour into a lined loaf pan and bake for about 45 minutes to 1 hour.

When the beautiful baked loaf comes out of the oven, let it cool for a little bit, and then slice off a nice hearty piece 🙂
